one thing to remember through all of this is that when a recipe says "bake for 25 minutes" it really means "check for doneness around 25 minutes". If it says shorten the baking time by 5 minutes, then it's simply a "check for doneness 5 minutes before you normally would have".
No baking recipe ever written can tell you exactly how long you should bake something in your oven with your pans because of huge variances in oven temperature (which over time looks like a distorted saw tooth and each oven triggers it's heat cycle in a different pattern), thickness of pans, color of pans, circulation pattern within the oven, and so on. |

Amen brother. This and one's oven in Georgia versus one in Seattle will be wildy off base for both cooking and dough texture. It's science and an art form at the same time. Neat, eh?
