Does anyone know how to crack eggs with one hand?
All of the chefs do it but I can't find any guidelines on how it is accomplished.

I hold the egg with three or four fingers. The thumb, index and middle finger and sometimes the ring finger. After the egg is cracked, the thumb and index finger and middle finger and sometimes the ring finger against the palm are used to push the two halves of the egg shell in opposite directions. |

I like to do it as follows:
1. Rinse the egg, this isn't actually necessary but it's a good practice
2. Hold the egg with the thumb, index, and middle finger on the top half, and the pinky and ring finger on the other half.
3. Hit it relatively hard and fast on a flat surface near the bowl or pan, and than immediately move it over the bowl.
4. Pull the shell apart by puling your thumb, index, and middle finger backwards.
Practice makes perfect |

The key point is the crack should be sharp, clear and in the centre, no mess; so that you can pull them apart by one hand. |
