Apple Pancakes

Mom and Grandma have been making these since I was little... no idea where the recipe comes from, but give it a shot (I'll post pictures of what the finished product should look like next time I make them):

Apple Pancakes

Ingredients -
3 Eggs, beaten
1/2 tsp. Salt
1/2 cup Flour
1/2 cup Milk
2 Apples sliced, Granny Smith
6 tbsp. Butter
1/2 cup Sugar
2 tsp. Cinnamon

Instructions -
Beat together eggs, salt, flour and milk. Set aside.
In a 10-in. skillet, melt 6 tablespoons of butter.
Add sliced apples, sugar and cinnamon.
Stir on medium heat for about 5 minutes.
Remove from heat and pour batter over apples, DO NOT STIR.
Bake on 425 degrees for 18-20 minutes or until sides are puffed and golden brown.
Remove from pan by flipping upside down onto a plate so that apples are on top.
Serve by slicing into pizza-shaped slices.
Top with butter and syrup and desired.

Enjoy!

I love apple anything :wink:

Should the skillet be non-stick? Or will any skillet do?

Non-stick is best, since it'll let the finished product just fall out. I've never used anything other than non-stick, though, so I'm not sure what the result would be otherwise.

Okay, thanks.
I was just thinking that this sounded like a "cast iron" skillet type recipe. Except for the "just fall out" part.

Actually if your cast iron pan is seasoned correctly, this would be a perfect recipe for it. I make pineapple upside down cake in my 12" cast iron skillet all the time. No problem with sticking. Also the butter in the recipe will help "grease up" the pan.

I havent ever tried these BUT I HAVE HAD CHOCOLATE CHIP PANCAKES and man are they good!!
