If you or your guest don't like chicken livers, use canned smoked oysters, or canned smoked mussels in your dirty rice recipe instead of using livers.

You can use small 1 inch by 1/2 inch cuts of tofu marinated in little bit of soy and fish sauce, with just a drop of liquid hickory smoke. Only marinate tofu for 15 minutes tops. You can also use the tofu like this for a substitute for any kind of meatless stir fry recipe.

That'd be nice, but reproducing the flavors those ingredients impart isn't possible. That being said, Chuck has some amazing veggie recipes that will most certainly tickle your tongue.
