I'm reasonably competant at poaching eggs in a skillet of simmering water with a little salt or a drop of vinegar, although they do spread out in a wispy way around the edges. Elsewhere on this site someone offers a link telling how to crack the egg into something like saran wrap and making a little bag that one cooks the perfect poached egg in with a nice firm white and no waste. I love this idea, but wouldn't the pcp's or whatever toxic stuff is in the plastic wrap get into the egg? Also, I'd like to know how to cook a perfect poached egg in a cup or so of water in the microwave. I do that when I give my dog an egg in her dinner, and would like to try it for myself, but the results seem unpredictable. Sometimes the yolk is hard. I like a runny yolk and delicate but solid white. Heat the water first? How much time? What microwave level of power? Add salt to water?

No problem at all at boiling water temperatures--212F or 100C. The problems with plasticizers occurs at temperatures used in deep frying, etc.

For perfect poached eggs, I like the egg poachers that have hemispherical depressions for the eggs that sit in a pan of steaming water that are sold by Williams-Sonoma and others.
