Was wandering why in the demonstration on making these cookies use low speed instead of med. speed to make dough?

When adding the eggs, if the mixer is on high speed then the egg might not incorporate as it hits the moving beater. Then the liquid egg goes flying out and it's a mess. After the eggs have been mixed in, we keep it on low because otherwise the beaters might kick up the flour and it gets all over the place. Because the mixer is running on slow speed we have to put the flour in gradually or it might not incorporate evenly. You can increase the speed as long as you're comfortable and the flour isn't kicked up into the air before it mixes into the batter.
