Blue fish Frittata-One of my favourite breakfasts:

For those who have access to fresh, and I do mean FRESH bluefish, this is a good way to start your day.
This is best with as much fresh Jersey ingredients as possible.
Finely chop a onion,bell pepper and a Jersey tomato and sauté in some butter.
After the sauté is started,add some chopped garlic,salt,fresh ground black
pepper and cayenne pepper. Remove the veggies after the onions have become
opaque and hold on the side. Put a bluefish fillet in the same pan, add some
more butter(unsalted butter) if needed. Cook the fillet and break it up as it is
cooking to make small chunks. Break 3 eggs in a bowl, add a small amount of
milk,season with salt, fresh ground black pepper and a dash of cayenne(or
Zatarain's Creole Seasoning). Add the veggies to the bluefish in the pan and
stir in the eggs, cook until the eggs set.This is outstanding when served with a bowl of
grits, which you can mix with the frittata on your plate, and about 5 hush
puppies. Use ketchup and/or hot sauce if like.
