Hello. This is my first post, and I want to say right away how much I've enjoyed what I've read so far. I'll be trying some lime marinated grilled chicken soon <G>.
I'm trying to learn to make French bread, and have come across an ingredient listing of of malt extract. What is that? Any reference I can find talks about liquid or powder. The recipe didn't stipulate, other than to say 2 teaspoons. I believe it is intended as a flavor enhancer but I can't tell that for sure either. What does it do?
I bought the book on Bread written by the baker at King Arthur Flour, and so far it has been very hepful, and interesting. Just can't find anything on malt extract. TIA for any help you folks can offer...

Malt extract is a syrup or spray dried powder form of the liquor produced by mashing/lautering/sparging (extracting) malted barley.
It provides fermentable and unfermentable sugars, dextrins, and malt (think beer bread) flavors. Essential in pretzel dough. |
