I was wondering if anyone had tips on how to make fresh ribbon pasta. I've tried once already and failed miserably, the pasta had the consistency and taste of rubber. Any advice on how roll out pasta really thinly?

In my opinion, you need a pasta machine to get a really good, thin sheet of pasta for things like spaghetti or tagliatelle.

Another secret is that you should not dust the work surface with too much flour when making the dough as this coats the pasta and it then forms a scum in the boiling water which acts as a kind of glue which can toughen the cooking pasta dough.
