Hi,

Does anyone have a recipe for (Chinese style) noodle dough that includes baking soda in the mix?

The reason I ask: While traveling in Thailand, my wife introduced to me to yet another wicked Thai snack. It's thick noodles (ones made with baking soda) that are deep fried to a crunchy, crispy deliciousness. She has made something similar as part of her cooking, but we can't find uncooked noodles that are thick enough to be just like the Thai temptation.
