Hello,
First of all, have to say LOVE the site!
I am currently exploring fermented foods, like sauerkraut, miso. I have my first batch of 'kraut brewing in the kitchen. It's too early to tell whether it's working or not, but I was wondering if you could apply your cullenary talents to the subject.
I gather from your name you are of Asian decent. At the local Asian markets, I find all kinds of intregueing pickled/fermented items ranging from little fishies to bean curd to mustard greens. Have you any insight or methods to share?
