cedar cutting board

I just finished building a deck and have many scraps of good solid cedar and redwood remaining. Is it safe and viable to build cutting boards from this wood?

Both of those woods are very soft and I would expect the cutting boards made from them to wear badly and have severe scar marks from cutting, any chopping would be a disaster. While cedar planks are often used as a backing for grilling various fish, I wouldn't use it for a cutting board.
