As a lean bread, foccacia is basically made of flour, water, yeast, and salt. What is great about this Italian flatbread is that you determine the extra amount of calories and fat to include as toppings. It is a meal in itself.

Ingredients for a 17" x 12" foccacia are:

All purpose flour5 cups
Water2 cups
Instant yeast2 tsp
Salt1 tsp
Olive olias much as desired
Sautee onions, mushrooms, red or green peppersas much as desired
Cooked ground meat, if preferredas much as desired
Parmesan cheeseas much as desired


1. Coat a 17" x 12" baking pan with olive oil and sprinkle with cornmeal

2. Using an electric mixer, mix flour, water, yeast, and salt with a dough hook. Do this at medium speed for about 5 minutes. Dough should be smooth but sticky. It should clear sides of bowl, but still stick to bottom of bowl.

3. Coat a bowl with olive oil and transfer dough there. Cover bowl loosely with plastic wrap, and allow dough to rise until doubled, about an hour.

4. Gently turn dough out onto prepared baking pan. Using your knuckles, stretch and press dough to evenly cover baking pan. Dimple dough with your fingertips.

5. Top with sautee onions, mushrooms, red or green peppers.

6. Cover loosely with plastic wrap and allow it to rise again for another 30-40 minutes, until nearly double.

7. Fifteen minutes before dough is ready, preheat oven to 350 degrees F.

8. Top dough with a layer of cooked ground meat, if desired, and bake for 20 minutes, or until foccacia is lightly golden brown.

9. At this point, sprinkle grated Parmesan cheese, or Romano, or mozzarella, or even Cheddar

10. Continue baking for another 5 minutes

11. Your finished foccacia should be golden brown, very light and springy.

It is fantastic dipping in tomato sauce. Smile

That sounds REALLY good. I have never heard of it before, I think I should make some for dinner sometime soon.

Fantastic when topped with a good bit of olive oil, coarse salt, garlic bits, and finely chopped rosemary.

Good foccacia is certainly delicious, and I'll eat it if I'm being bad, but I hardly think it is the basis for a good, healthy meal. Even with your best 9 grain four, it has far too many nutritionally empty calories.
