I am in search of a Bernaise sauce to accompany beef filet steaks. Can anyone offer one that has been tried and tested? Thanks.

That sounds like what I basically use when making my Bernaise sauces (which is basically a Hollandiase with tarragon.)

Important note: temper your egg yolks; you don't want scrambled eggs.
