I ran across this wonderful site at Thanksgiving and got the BEST deviled egg recipe from here. I lost my print-out and now cannot find the recipe on the site either. Can anyone help me? |

Ingredients:
12 Almost hard boiled eggs, shelled
1/2 cup thickened cultured cream
1 tablespoon Dijon mustard
1/2 cup of very finely minced double smoked cooked pork belly
2 tablespoons sharp vintage Cheddar cheese or a Blue - to taste
1 tablespoon of mini capers
1/4 teaspoon fresh ground black pepper
1 pinch sea salt
Directions:
If using duck eggs cook till the yokes are just beginning to set
chicken eggs you can cook a little firmer if you want
the runnier the yokes the richer and smoother the finished dish.
within reason they must not be completely liquid.
Nice touch :- place a truffle in a bag with the eggs for 24 hours
before you make them up, the perfume will penetrate the eggs.
Halve eggs lengthwise.
Mash yolks with fork. Add all other ingredients.
Fill each half egg white with yolk mixture.
Chill until ready to serve.
Serve with a light salad and crusty bread, and a drizzle of a good olive oil. topped with caviare or salmon eggs.
