Excellent recipe for when you quite simply want some burgers pronto.

You will need:

500g steak mince
1 x large onion
1 tbsp mustard
1 oxo cube
salt, pepper, chilli flakes.

Finely dice your onion, mix it together with your mince, crumble in an oxo cube, throw a healthy dose of salt and pepper in, and form into 4 patties by hand.

Now, allow those patties to sit in the freezer for somewhere between 15-20 minutes. the reaction between the salt and proteins will help the patties to 'bind' without the need for egg, breadcrumbs or other filler.

I tend to cook using an induction hob although these are great for a BBQ (particularly given the indian summer we seem to be having in the UK at the moment).

Your approach touches on a philosophical issue. Some people put all kinds of things IN their burgers (like the onion and Oxo cube you suggest). Others (like me) like our burgers with meat, salt, and pepper. I really like onions ON my burger but not IN my burger.

I wonder why?
