I am allergic to many very commonly used ingredients [e.g. milk - in all its forms, canola oil, eggs, etc.]. I am not very interested in cooking but am rather addicted to eating. I NEED something like a chemistry book of food which would give information such as: eggs - used as emulsifier. May be replaced by --- at the rate of --- = 1 egg.

Can you recommend such a source? I need any MORE recipes calling for things I can't eat.

The Food Substitutions Bible is the best resource for this that I've found. When possible, they've broken up the ingredient into types of uses and suggests alternatives for that use and quantity.
