Mostaccioli

This is about the yummiest thing I have ever had... (My mom started making this in the 80s (Recipe adjusted so it tastes the same as it did then))

Ingredients:

1/2 chopped green pepper (1/2 of a pepper chopped up)
1/2 chopped onion (1/2 of an onion chopped up)
1/2 lb ground beef
1 lb can tomatoes
6 oz can tomato paste
1/2 cup water
1/2 tsp salt
1/4 tsp pepper
1/2 lb mostaccioli noodles
2 or 3 packets of VELVETTA CHEESE from Kraft Shells and cheese original dinner
bay leaf
1 Jar of Speghetti Sauce (The "Flavoured with Meat" Kind) (Add about 1 cup)

Prep:

In oil,saute onion & pepper until tender. Add meat & cook until brown. Stir in tomatoes,tomato paste,water,salt,pepper,bay leaf. Add Speghetti Sauce, Simmer.

Cook Mostaccioli noodles as directed. Pour velvetta packets in.. (In a 2qt casserolo,arrange alternate layers of noodles,sauce and cheese.)

Bake @ 350 for 30 mins

The Result:

The Best tasting dish you'll ever have!!!!!!!!!

I hope many will enjoy this as much as I do...............

Potato Bacon Soup

1/2 lb thick sliced bacon, diced fine
2 medium onions, rough chopped
8 medium potatoes, rough chopped
4 cups homemade chicken stock
1 pint half and half
salt and pepper to taste
3-4 sprigs fresh thyme
2 bay leaves
dash of Old Bay Seasoning

Dice the bacon and cook in a large, heavy bottomed pot. With a slotted spoon, remove the bacon when just crisp. Leave the fat from the bacon in the pot and add the onions. Sweat until translucent and then add the potatoes, chicken stock, fresh thyme, bay leaves, S&P and Old Bay. Bring this all to a boil and then reduce to a simmer for 1-2 hours. Remove the stems from the thyme and the bay leaves and let cool for a while. Take half of the mixture and puree it in a blender and add the 1/2 and 1/2. mix all into the pot and re-heat. Garnish with the bacon at service!!! Eat and enjoy!!!

Jalepeno Lime Hummus

If you like hummus you'll love this Smile

Ingredients
1 (16 ounce) cans garbanzo beans, drained ( Chick Peas)
3 tablespoons bertolli extra light tasting olive oil
2 tablespoons tahini ( Fresh Sesame Seeds)
1 tablespoon water
2 tablespoons fresh squeeze lime juice ( about one lime)
1 teaspoon garlic, fresh pressed ( about two cloves)
3 tablespoons bottled jalapenos, drained and chopped
1 teaspoon paprika
1/4 teaspoon salt
Directions
Put all items into a small food processor and blend until smooth.

Smear on a good flatbread or (cooked) pizza dough. Smile

I'm a salad lover. Any kind!
This goes great with any sort of grilled meat, and it nice over a bed of coleslaw as well.

It's super easy, just cut all the ingredients and mix together with a bit of olive oil, salt, pepper, chili powder and lime juice to taste.
(I wanted to add fresh jalopenos, but the s/o is a whimp when it comes to spice)

Super Easy Black Bean Salad:

Black Beans
Red Bell Pepper
Cucumber
Avocado
Fresh Corn
Green Onions
Pineapple

wonderful seafood tostadas

I use Whole Foods 365 brand blue corn taco shells and break them in half (and toast briefly until crispy) as the base for this dish. Could also use your favorite tortillas.

Topping:

Finely chop the following and mix together:

Green head cabbage
Purple head cabbage
Red leaf (or other) lettuce
Carrot

The amount of carrot is smaller in proportion to the other ingredients.

Dress this mixture with this dressing:

Safflower oil (I use organic from Whole Foods), lots of lemon and a little bit of apple cider vinegar, salt and pepper. This should taste lemony. I use much more lemon than vinegar. Proportionately maybe 1/4 C oil to about 1 tsp. vinegar.

Pour dressing over veggies and mix until well coated. Make enough dressing so that the veggies are well coated and look glossy. Make lots of the veggie mix and really pile it on the toasted taco shells.

Now cut chunks of ripe avocado and toss on top of this or lay along the side of the plate.

Next layer:

Quickly saute shrimp or scallops (or chicken or beef?) in ghee or butter with salt and pepper. You could sauté some green onion with this mixture if you like. I don’t add onion. When done, spoon these on top of veggies, along with just a little of the juice from cooking.

Crowning touch:

Top with sour cream mixed with chipotle paste to desired hotness. I use ‘The Art of Chipotle’ brand chipotle paste with adobo from Whole Foods. It is really wonderful.

Olive Bread for Bread Machine

I created this recipe by combining several olive bread recipes. I baked a loaf today and my family really likes it.
The olives, rosemary and basil releases a wonderful aroma while it's baking and carries through to the finished product when you eat it. Try it warm spread with butter. It makes wonderful savory toast the next day.

Makes one 2-lb loaf

Ingredients:

2 tablespoons olive oil
1/3 cup of brine (juice) from jar of green olives,
Plus enough Warm water, to make 1 2/3 cups of liquid when combined with the 1/3 cup of brine from green olives.
2 tablespoons honey
1 teaspoon table salt
1 1/2 teaspoons dried leaf basil
1 1/2 teaspoons crushed dry rosemary
4 cups all-purpose flour
2/3 cup whole wheat flour
2 1/4 teaspoons (or 1 packet) active dry, bread machine or instant yeast

1/3 cup drained black olives, sliced into fine rings
1/3 cup drained green olives, sliced into fine rings (pimento stuffed olives ok)

Preparation:

Mix 1/3 cup of olive brine in a 2-cup measure; add enough warm water to make a total of 1 2/3 cups of liquid.

Add all ingredients (except for the sliced olives) into the bread machine in the order given.

Select Basic or White Bread setting; 2-lb loaf; medium crust.

If required, add more water or flour, a tablespoon at a time, to form a firm, slightly sticky, non-crumbly
ball of dough.

Add the sliced olives at the beep.

Makes one 2-lb loaf of olive bread.

Hey, great examples. I'm sure that i'll try some of them. I am now doing a cooking exercise, where I take a list of restaurant recipes and try to recreate them with guidelines.

I originally strted doing so with cheesecake factory.
Now I'm doing Panera recipes!

But, I'll be sure to try out Peach blackberry pie!

I'm vegeterian so most of time I eat diferent kinds of salads. I love to use mandoline slicer to cut the veggies. My favourite salad is quinoa salad with tomatoes, cucumbers and coarinder.
