I am looking through old family baking recipes and they only state flour but not how much.

Is there a general rule to follow when it comes to how much flour a recipe would need/take?

The amount of flour completely depends on what you're using it for. Of course you'd need vastly different amounts to make bread than to make a roux or to dredge a chicken.

I'd look at other online recipes for the same food or similar foods, or even better, get a copy of the book "Ratio" that describes how you can make hundreds of different recipes simply by understanding the basic ratios of ingredients behind them.
