Equinox and/or Solstice Flapjacks

OK, OK, OK, I know that I am a little late posting this one, as the Autumn Equinox was on the 21st of September; I have experienced a little trouble with the device driver programs on my laptop, which have prevented me from using any of the USB ports for the printer, camera, webcam, etc. and so I have had to resort to using Lois' laptop to up load to my photobucket albums.

My daughter's birthday is also on the 21st of September, and making her Equinox/Solstice flapjacks has been one of those 4 times a year traditions for me and her. Even though she now lives in London, I ensure that I make and send her some Equinox Flapjacks in the parcel along with her present.

I have chosen; Dark Plain, and White Chocolate to represent the equal length of night and day on the Equinox; 12 hours each. The milk Chocolate represents the gradual shift from one to the other.

Ingredients:

8 Ounces of Muesli.

2 Ounces of rolled (porridge) Oats.

3 Ounces of Margarine.

2 Ounces of Demerara Sugar

3 Ounces of Golden Syrup

3 Ounces of clear Honey

2 Ounces of Milk Chocolate

2 Ounces of Dark Plain Chocolate

2 Ounces of White Chocolate.

Method:

Melt the Margarine, Sugar, Golden Syrup and Honey together in a saucepan.

Add the Muesli, stirring it in well, add the Oats; again stirring them in well.

Turn the mixture into a shallow greased tin, spread evenly, and bake for about 15-20 minutes at Gas Mk4 or 350*C.

Remove from the oven and divide into pieces; I did 16 pieces.

In seperate pots, melt the Dark Plain Chocolate, and the White Chocolate.

When melted, spoon the dark chocolate on to one half of the individual flapjack pieces and allow to set. Then spoon the White chocolate on to the other half of the flapjack pieces.

Melt the Milk chocolate in a seperate pot, and use it to make a design of your choice over the already set Dark and White Chocolate halves.


Sit back, relax and watch the rest of your family, friends, and visitors devour them like ravenous beasts.

Spreading the mixture on to the baking tray:

After baking in the oven, remove the tray and allow to cool:

The Dark Plain, Milk and White Chocolate broken into pieces in their individual pots and ready to melt by standing in a pan of hot water:

fascinating. looks like a tasty sweet!

"flapjacks" are "pan cakes" on this side of the pond - a curious language difference!
