Lois and I became a little lazy when we arrived back from Essex yesterday, knocking up a quick, unplanned meal for us from items in the cupboard and fridge.

Mackerel fillets in tomato sauce.

Serves two

Ingredients;

1 packet of 4 smoked Mackerel fillets.

1 can of chopped tomatoes.

1 teaspoon of tomato puree.

1 teaspoon of honey.

4 spring onions ~~~ finely chopped.

2 sticks of celery ~~~ finely chopped.

Basil ~~~ as much as you like: We used about 2-3 heaped tablespoons of freshly chopped basil.

Two table spoons of sweet chilli sauce.

A grind of Sea salt & Seaweed.

A good grind of Black pepper.

Lightly oil a ceramic oven dish and place the Mackerel fillets in it.

Mix up the other ingredients in a bowl, and then pour over the Mackerel fillets, and allow to stand and marinade for 20-30 minutes; cover with tin foil.

Place in a medium - hot oven for 15-20 minutes.

We had Cous cous with ours;

100ml of Cous cous: note I have used a volume measurement and not a weight.

175 ml of boiling water

A really good dash of Chilli & Garlic Worcester sauce.

Bring the water to the boil, and measure off into a graduated jug, add the Worcester sauce and stir well until fully dissolved.

Pour over the Cous cous in a bowl, stir well and cover, leave for about 8 minutes.

Make a bed of Cous cous on the plates, lift out the mackerel fillets and place on the bed of Cous cous, pour the remaining sauce over the Mackerel and enjoy.

quick, cheap, cheerful, filling and very, very tasty. :food:


I think that this sauce recipe will work with just about any fish; next weekend we will try it with some Coley fillets.
