Hello all! I am using a smoke machine to smoke chicken thighs. I want to impart the smoke flavor but I also want them to remain tender. They instead turn out like "jerky". Is there any way to keep them soft and moist?

What's your temperature and time? Should be 200 to 250 degrees F until about 160 degrees F internal temp on the chickies.

Smoke them for 2 hrs then finish them in the oven. Thighs are harder to smoke because of the high fat content.
