For century’s, in the stark coastal corner in South Africa, the Berber Shepard’s have followed goats around as they clamper upon the gnarled and twisted, evergreen argan trees to eat their leaves and leathery olive-sized fruit.

Berber women collect the undigested pits that the goats spit out or excrete and split them to extract the bitter kernels inside, which they wash, hull, roast and press the nuts for oil. This has been a tradition for centuries. When the tree finally dies (after between 150 - 200 years) its wood is used by Bedouins for making fires.
In this part of Morocco this oil is used widely for food and health. It has a nutty flavour a popular use for argan oil is in amlou, a very tasty dip consisting of roasted almonds and honey. Argan oil takes 20 hours to produce 1 litre and remains one of the rarest oils in the world due the small and very specific growing area.
