Hi! I'm trying to find a recipe for a staple in the NY/NJ metro area Italian bakeries. It is round (usually about 3" in diameter), crumbly texture (not airy or chalky but does absorb milk well), has a yellow tint to the cookie and looks like a dry sponge inside when broken up (but not spongy or light). It has an almondy/lemon taste and always has rainbow sprinkles on top. I have done some research, and it is not an Italian Sprinkle Cookie (these are round with icing and poofy) nor is it a piped butter cookie (such as the ones that are made in an "S" shape/pink or green leaf/ swirl and dipped in chocolate nor the one with the cherry in the middle). Does anyone know the name of this? I have been led astray by several bakeries - one said it was "just a simple sugar cookie" one said "just a butter cookie" another even said it was a Pasta Frolla cookie... it's not that "simple" - I've tried recipe after recipe with no luck. Thanks!!!!!

Hi, everyone! I've made some progress. I've been told by a bakery that makes these to try an Ice Box Cookie recipe and add lemon and orange extracts. I've never made an Ice Box Cookie - does sound reasonable? Or are they just leading me astray once again? I have a photo of it - if someone can tell me how to get it up here, I'll post it.

Mostaccioli Recipes
Recipe I

Ingredients


•2 cups flour
•1 cup sugar
•2 Tbs butter, room temperature
•1/3 cup milk
•1/2 tsp baking powder
•1/2 teaspoon baking soda
•1/3 tsp ground cinnamon
•1/4 teaspoon ground cloves
•1 tsp orange flavoring
•1 egg
•1/2 cup semi-sweet chocolate chips
•1/4 cup almond slivers, toasted
Directions


1.In a large mixing bowl stir together the flour, sugar, baking powder, baking soda, cinnamon, and cloves.
2.Blend in the butter in with pastry cutter or fork.
3.Mix in the egg, milk, orange flavoring, the chocolate chips, and the almond slivers.
4.Allow the dough to rest for 1 hour in a cool place.
5.Form the cookies into an S shape. The dough is sticky and you will need either wet hands or buttered hands to handle the dough.
6.Place on a cookie sheet lined with parchment paper.
7.Bake for 8 to 10 minutes at 350F. To test insert a toothpick. They are done when the toothpick comes out clean.
8.Allow to cool.
9.Sprinkle with a little confectioner's sugar.
