To shape my rolls, I knead briefly after the first rise, let rest for 10, divide the dough into portions, and shape the rolls in my floured hands, trying to keep a stretched surface and a round shape. But then, alas, on the second rise, on the cookie sheet, the rolls flatten out like pancakes. What am I doing wrong?

presuming that you are not inadvertently squishing them with a covering...

try making the dough a bit drier / stiffer

Try doing what some bakeries do, position the rolls in a small proximity to one another so they support each other.
